With Karai, Chef Young Jun, of Haruno, Kai, and Koriya, has her own take on ramen. Jun takes ramen seriously, and it shows in her food. The naked ramen with sesame noodle spinach, wood ear mushrooms, bean sprout, seaweed and sprinkled with lime is a highlight. If you’re feeling adventurous, order it with a hard-boiled egg. The Tonkatsu is a house special, a pork cutlet with Japanese mustard barbecue sauce, shredded cabbage, and miso soup. Authentic ramen starts with Tonkatsu broth that is freshly cooked for 24-48 hours daily which creates a thick white broth.
