Kimchi is usually composed of fermented cabbage, radish, garlic, ginger and  sometimes scallions. The fermentation process produces lactic acid and all kinds of bacteria that are natural to your gut microbiome, which really just means eating this food is good for your gut. It’s also pretty delicious. Here are some of our favorites.

Gogi Quesadilla at The Press Coffee & Juice Bar

2710 S. Glenstone Ave., Springfield
For Korean/Mexican fusion, start here. Melted cheese and crunchy kimchi are smashed between two tortillas and served with a side of pico de gallo.

Kimchi Tots at Lucky Tiger Sandwich Co.

3654 S. Campbell Ave., Springfield
Kimchi and cheese—it’s irresistible. This time a pile of crispy tater tots is smothered with gooey cheese and topped with kimchi and sesame seeds.

Kimchi Fried Rice at Koriya

4121 S. Fremont Ave., Springfield
Fill up on kimchi stir fried with rice, Korean bulgogi beef and broccoli.

Kimchi Jigae at Golden Korean Restaurant

Kimchi Falafel Tacos at The Wheelhouse
