What they do: The Wheelhouse is one of the O.G. food trucks in Springfield, and we still love the heck out of it. They blend southeast Asian flavors and Mexican-style dishes for creative takes on everything from pad thai to nachos.
What to order: Pineapple fried rice flavored with ginger-habanero coconut oil.
Chubby Cactus Tacos

What they do: This truck slings some seriously addictive tacos, dripping with juice from tender slow-cooked meats and packed with flavor. The mini quesadillas, for example, are dunked into spicy chili oil before they’re fried on the flat top, and holy moly they’re good.
What to order: Barbacoa dipped and fried mini quesadilla.
