If any variety of Mexican-Asian fusion was going to sell me, it would definitely be the melding of Mexican and Korean cuisines. Kung Fu Taco (3354 S. National Ave., Springfield, 417-409-3478) is exactly that—Mexican-Korean fusion—with a hint of familiarity. The restaurant opened earlier this year in the spot that used to house Little Korea. The restaurant is under the same ownership, which is good news. It means some of your Little Korea favorites aren’t gone for good—they’ve just been re-styled, per say. Bulgogi tacos, Gangnam-style chicken rice bowls, and more are what’s on the menu at Kung Fu Taco. Spicy bulgogi beef wrapped up in a flour tortilla and topped with spring mix, cilantro and fresh kimchi is a strange, but delicious combination. The Korean spices and kimchi provide a acidic kick that just isn’t typically found in Mexican cuisine. My personal favorite, though, was the Kung Fu sweet potato waffle fries. A bed of crispy sweet potato waffle fries is topped with bulgogi beef, wasabi cream, spicy mayo and plenty of crispy kimchi. It was the Asian twist on nachos I never knew I needed.
